Formulation and quality assessment of biscuits fortified with galactagogue-rich ingredients for lactating mothers

Abstract
This study developed and evaluated biscuits fortified with a natural galactagogue mix containing moringa leaf, moringa pod, black cumin seed, and cashew nuts for lactating mothers. The galactagogue mix was incorporated into wheat flour at 5%, 10%, 15%, and 20% levels. Incorporation significantly improved the protein, fat, fiber, ash, antioxidant activity, and total phenolic content of the biscuits. FTIR analysis indicated the presence of bioactive lactogenic compounds, including saponins and phytoestrogens. Sensory evaluation showed that biscuits containing 10% galactagogue mix had the highest overall acceptability. The findings demonstrate the potential of developing nutrient-rich functional biscuits for lactating mothers.
